Fats, oils and grease (FOG) are a significant concern for the City of Fredericksburg in the operation of the wastewater collection system. Sewage collection system problems arising from FOG impose a financial burden on the City. Fredericksburg incurs costs to perform routine monitoring and cleaning of sewers, manholes, wet wells and when responding to FOG-caused surcharges, backups, and overflows.
While FOG can originate from residential and industrial users, food service establishments (FSEs) are the primary FOG sources in the Fredericksburg sewer service area. As such, FSEs shall be the primary focus of this program.
